1 Tbsp Olive Oil
1 Onion, sliced
1 Cup Mushrooms, sliced
1 Cup Corn, frozen
1 Garlic Clove, minced
To Taste Salt and Pepper
1 Pkg. Hamburger, fried
1 ½ Cups Long Grain White Rice
3 Cups Beef Broth
1 Tbsp Margarine (optional)
1 Tbsp Parsley, finely chopped
In a large pot, heat oil. Fry onion, mushrooms, corn, garlic, salt, and pepper until onion is soft.
Add beef, rice and beef broth. Bring to a boil. Stir and reduce heat to a low simmer. Cook for 15 minutes.
Drop margarine in pot. Do NOT stir. Turn off heat but leave pot on burner for a further 10 minutes, or until rice is cooked and liquid is absorbed.
Turn into a serving dish and gently fluff with a fork. Sprinkle with parsley.
